Wedge Salad with Tarragon Vinaigrette

5 Minute Prep Time

2 tbsp Champagne vinegar

1 tsp Dijon Mustard

1 tbsp chopped (fresh preferred) tarragon

2 tsp chopped (fresh preferred) chives

¼  cup olive oil

1 large head Oak Tree Bibb/Boston lettuce, quartered, leaving some of the core intact

1. In a small bowl whisk together vinegar, Dijon, tarragon and chives. Add olive oil gradually. Season with salt & pepper to taste. Set aside.

2. Place lettuce wedges on each of 4 small plates. Drizzle with vinaigrette, and serve.
