Penne with Sausage & Escarole

Sweet Italian sausage, casing removed (Note: Turkey Italian/Vegetarian sausage works, too) 1½ lbs
Minced garlic 2 tbs
Oak Tree Escarole (Italian Lettuce), rinsed (1 Bunch from Oak Tree Hydroponics for 8 cups)
Parmigiano-Reggiano cheese ½ cup
Crushed red pepper ¼ teaspoon
Penne Pasta 1 pound
Olive Oil 1 teaspoon
Onions 2 Medium Size, cut/dice for 2 cups
Red Bell Pepper, seeded 1, cut/diced for 1 cup
Salt & Pepper ½ teaspoon each
1. Bring your large pot of salted water to boil, then add pasta until just tender. Drain pasta into colander, reserving 1 cup of H20; set aside.
2. While pasta cooks, heat olive oil, then add onions, bell pepper, salt & pepper. Cook until vegetables turn soft, about 4 minutes.
3. Add sausage, breaking pieces into smaller bits with a wooden spoon, until browned, approx. 6-8 minutes. Add garlic & escarole. Cook 5 minutes.
4. Transfer into large serving bowl. Add sausage, cheese & crushed pepper. Toss to combine. Drizzle with olive oil. Provide salt/pepper to taste. Serve immediately.
